Any of the beaches/islands Koh Samui, Koh Pi Pi, Koh Pang Nga, Koh Chang, Hua Hin...if you want to head inland than Chaing Mai or Chaing Rai are good, although maybe a bit much for just a weekend. Hua Hin is close to Bangkok so not too difficult to get to by train. Samui is easy by plane, but more developed than some other areas, still there are quiet parts remaining. Phuket is another obvious choice and you can pick a beach based on your preference for quiet or hopping. I do not like Pataya.
